Well, unless you're living under a rock or own a chicken farm egg prices are high af. I recently went to Trader Joe's bc they have the best prices for eggs. Now, don't go telling everyone bc you won't be able to find any. Anyway I went to purchase groceries and of course I buy eggs but when I went to the usual place they had other products there. Now I'm upset bc I need some eggs, I turn and see 4 boxes of eggs on a flat top cart and two employees were posted at both sides. I approached them I reached in the box to select a dozen brown eggs priced at ($4.99) and then I went to reach for a dozen white eggs. Before I could put my hand on the carton, the employee said "one per customer". I was like whaaat??? I understand, it's to avoid hoarding (like the TP during the plandemic)... there has to be a limit. I simply could have went out and came back in for another dozen but I was good with what I had at that time.
However, when it's time to bake? I need those eggs no matter how much they cost. I don't think I will be changing my cake prices for now. Also, there are a few things we can use to substitute eggs without affecting the flavor and/or texture. I make vegan cakes too, so I know the tricks to still bake a nice fluffy and moist cake without the use of eggs. What are you doing during this egg shortage??? The product is required so we have to find ways to make it work. Don't panic just go with it, we can't allow this to make us throw our hands up. You can make cake without eggs or with less eggs. When things like this happens that's when we have to pivot and be innovative. Creativity is our best skill as bakers, cake decorators etc.
The thing that bothers me is that we don't just get eggs from U.S. based farms. We get them and all types of foods imported. The price gouging is wild though... bc if Trader Joe's can charge an affordable price why can't places like Costco, BJ's, C-town and other supermaket chains do the same? I believe it's just another capitalistic tactic. IJS last year it was the same thing with these outrageous egg prices at the beginning of the year. You know it's bad when the waffle house charging an extra .50 per egg smfh. Then again has the price for an egg mcmuffin increased... you have to think about those things. Why has those restaurants been able to maintain their menu and not increase the prices...? Let's talk about it!
